PESTO PASTA WITH SUN DRIED TOMATOES AND ROASTED ASPARAGUS

INGREDIENTS
- 8 ounces medium shell pasta 贝壳意面
- 1 pound asparagus, trimmed 1 磅芦笋
- 2 tablespoons olive oil 2 茶勺 橄榄油
- Kosher salt and freshly ground black pepper, to taste 盐,黑胡椒
- 1/2 cup basil pesto
- 1/3 cup julienned sun dried tomatoes in olive oil, drained 灌装橄榄油泡西红柿干
- 1/3 cup diced mozzarella cubes 1/3 杯 Mozzarella 起司,切小块
- Fried egg, for serving 煎蛋一个
INSTRUCTIONS
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.烤箱预热到435F。在烤盘上抹小许油
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. 煮意面。滚水加盐,放入意面,根据意面包装上的时间做参考
- Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt and pepper, to taste; gently toss to combine. Place into oven and roast for 8-12 minutes, or until tender but crisp. Let cool before cutting into 1-inch pieces. 芦笋放在烤盘上,撒些橄榄油,并加盐和胡椒,放入烤箱大约烤8-12分钟 或者直到芦笋有些脆。取出后,等温度下降后把芦笋切成1英寸长的小段儿。
- In a large bowl, combine pasta, asparagus, pesto, sun dried tomatoes and mozzarella. 在一个大碗里,加入刚煮好的意面,芦笋,橄榄油炮制的干西红柿, 起司还有PESTO 酱,拌均匀
- Serve immediately with a fried egg, if desired. 放一个煎蛋在上面,就完成啦。
